Instant Pot French-ish Onion Soup

I love french onion soup, but unfortunately I do not have the time or patience to make it the time consuming way that the beloved Julie Child intended. I call this version French-ish because the flavor is there but the technique of cooking this soup is far from French! This recipe I created in my Instant Pot turned out pretty fantastic and I hope you try it and love it as much as I do.

I take short cuts and cheat so much more now that I have a toddler and do not have the luxury of time on my hand. I'm all about short cuts and that's why I love my Instant Pot so much. The instant pot caramelizes the onions in 20 minutes. After that, its just heat and serve the soup and broth together. The other secret to this french-ish onion soup is beef consomme. Beef consomme has that acidity, sherry flavor that you often taste in French Onion Soup.

French-ish Onion Soup
4 Tbs unsalted butter butter
4 Large yellow onions, thinly sliced
1 tsp salt
1 tsp brown or white sugar
5 tbs water
1-2 sprig fresh thyme sprigs
1 bay leave
2 c chicken broth
2 c beef broth
2 cans beef consume + ¾ can water
Shredded gruyere cheese
Slices of toasted French Bread
Turn on saute mode high, melt butter, add onions. Saute onions for approx 10 min. Add salt, sugar, water, thyme and bay leaf, stir. Close lid. Make sure the vent is sealed. Manual pressure for 20 min. Quick Release and stir onions. Turn on saute, high. Cook out liquid approx. 5 minutes. Add chicken broth, beef broth, consume and water and heat until soup starts bubbling. Try not to stir too often as it will break up the onions into small bits or if you like that stir to your heart's content. Turn on your oven broiler. Ladle soup into ramekins and place a slice of french bread onto each bowl. Add shredded gruyere and place under broiler until melted. Serve hot!
