I usually find canned refried beans too salty, even the low salt ones are too much for me. I'm so glad I figured out how to make my own. I can't stop using my instant pot for everyday cooking now. It's become an addiction really, but a good one I guess. I keep finding new ways to use it. I never thought in a million years I would be making making my own refried beans, but here I am!

1 cup dried pinto beans

4 cups water

2 tsp minced garlic

¼ tsp salt

¼ tsp cumin

¼ tsp paprika

1 bay leaf

1 tbs lard/bacon fat (optional)

salt and pepper to taste

1. Rinse and sort beans. Place into instant pot. Add all ingredients. Close lid and make sure vent is locked. Set to chili/stew or manual pressure for 30 minutes. Allow a full natural release of pressure. (It took 33 minutes for full pressure to release)

2. Drain and reserve liquid. Discard bay leave. Return beans to IP. Set to sauté mode (on Medium). Add 1 cup of cooking liquid back and use immersion blender to mash to desired consistency. (A food processor would probably work too). If beans are dry, slowly add additional liquid, until desired consistency is achieved.

3. Season with salt and pepper to taste.
