Turkey and Cabbage Soup

I whipped this up for lunch today and it was such a quick soup to make. Low effort, high flavor and kiddo loved it. I immediately wrote the recipe down because I will be putting it in the rotation.

I've had braces for about a month and my extractions (of FOUR teeth) done about three weeks now and just started to feel normal again. I still have very low energy and lack of an appetite but I needed to make something for the baby (who is actually a toddler - I'm just not willing to except it yet) and myself to eat. We normally grocery shop on Friday night and since today was grocery day I needed to make room in the fridge! I found half a head of cabbage and ground turkey left, so I started thinking of soups I could make.
This recipe came to me because, well, it was what was left in the fridge. #momlife
I didn't want to bother with watching the stove so I also pulled out my Instant Pot. I followed my standard recipe for soups. Saute meat, saute veggies, add broth, simmer and I'm pretty impressed with how it turned out. The best part was Baby Girl loved it and wanted seconds. I served hers over brown rice.
Turkey and Cabbage Soup
1 tbs olive oil
1 lb ground turkey
1 tsp salt
1 tbs Italian seasoning
1 tbs butter
1 shallot
2 cloves garlic minced/crushed or diced
4 large carrots, sliced (half moon shape)
1 stalk of celery
½ head of cabbage - shredded
6 cups chicken broth
1 can (14.8 oz) organic diced tomato (with no salt or additional seasoning added)
¼ c half and half or heavy cream
Turn the Instant Pot's saute method on the 'High' setting. Add olive oil and wait until oil is hot. Add ground turkey, Italian seasonings, and salt. Brown meat and remove from the instant pot. Add butter, wait until melted. Add shallots, and garlic, cook until fragrant ~ 1-2 minutes. Add carrots and stir until incorporated. Layer cooked turkey over veggies. Add chicken broth and diced tomatoes. Cancel saute method and Pressure cook for 4 minutes. Natural pressure release (NPR) for 5 minutes then Quick Release (QR). Once pressure is released, stir in half and half or cream.
